New Caledonia Obsiblue Prawn Caesar Salad


Ingredients 4 portions


  • 1 Bridor Baguette sliced
  • 10 Don Bocarte anchovy fillets
  • 1 tablespoon white wine vinegar
  • 1 1/2 teaspoon green mustard
  • 1 clove garlic, crushed
  • 120g Mayonnaise
  • 4 Parma Ham rashers
  • 20 medium uncooked Obsiblue prawns, shelled deveined, leaving tails intact
  • 1 romaine lettuce, leaves torn
  • 150g parmesan, freshly flaked

Cooking Steps:

1.    Preheat oven to 160°C/140°C fan forced. Cut the bread and place in a single layer on a baking tray sprinkle olive oil, salt and black pepper. Bake for 20 minutes or until light golden and crisp.

2.    To make dressing, use paper towels to pat oil from anchovies. Coarsely chop anchovies, reserving half for salad. Blend or process remaining anchovies, mayonnaise, Parmesan, vinegar, mustard and garlic for 1 minute or until smooth. Season with salt and pepper.

3.    Heat oven to 120C place Parma ham between 2 sheets of baking paper and bake 45 min until crisp.

4.    Heat oil in a small frying pan over moderate heat. Add prawns to pan and cook for 2 minutes each side or until cooked.

5.    Combine lettuce, parmesan, bread and reserved anchovies in a large bowl. Divide salad among serving plates. Serve topped with prawns. Drizzle with dressing and sprinkle with pepper. Place the Parma ham crisp on top.
