Ingredients for 4 portions:

  • 4 Eggs
  • 2 Egg Whites
  • 50g Rice Flour
  • 100g Breadcrumbs
  • 180g Frying oil
  • 50g Sturia caviar


  1. Cook the eggs in boiling water and then dip them in cold water. Peel off the shells.
  2. Heat the frying oil.
  3. Carefully pass the eggs into the rice flour, the egg white and the breadcrumbs.
  4. Repeat the steps twice without using the rice flour.
  5. Then immerse in the oil until it is nicely coloured.
  6. Cut the egg horizontally and, at the last moment, add a quenelle of caviar to the slice.
