Preparation

Ingredients 

Vanilla Cake Mix 

  • 6 Egg yolks
  • 200g Caster sugar
  • 100g Whipping cream
  • 1 Vanilla pod
  • 160g Plain flour
  • 4g Baking powder
  • 60g Unsalted Butter

Method

  1. Mix the egg yolks with the sugar, then add the cream and vanilla.
  2. Sift the flour and baking powder together and combine with the first mixture. 
  3. Add the melted butter. Mix. 
  4. Store at room temperature.

Ingredients 

Cocoa Cake Mix 

  • 4 Egg yolks
  • 120g Caster sugar
  • 70g Whipping cream
  • 80g Plain flour
  • 20g Valrhona COCOA POWDER
  • 2g Baking powder
  • 30g Isigny Butter

Method

  1. Mix the egg yolks with the sugar, then add the cream. 
  2. Sift the flour, Valrhona cocoa powder and baking powder together and combine with the first mixture.
  3. Add the melted butter. 
  4. Mix.

Assembly 

  1. Grease the cake tin and line with baking paper.
  2. Fill one piping bag with the vanilla mixture and another with the cocoa mixture. 
  3. Fill the bottom of the cake tin with one third of the vanilla mixture, then add half of the cocoa mixture lengthwise into the middle of the vanilla mixture.
  4. Pipe in another third of vanilla mixture and put the rest of the chocolate mixture in the middle. 
  5. Finish off by layering the final third of vanilla mixture across the top.
  6. Use a knife dipped in melted butter to make a split in the cake’s surface to help it rise in the oven.
  7. Bake at 150°C (Gas Mark 2) for approx. 60 minutes.
  8. Check it is fully baked by piercing the cake with a knife – If it comes out clean, the cake is ready. Turn out onto a rack and leave it on its side for 10 minutes so it keeps its shape.
