Juan Pedro Domecq raise their small herd of 100% Iberian pork in their family Odessa near Seville, Spain. They control each stage of the processes, from rearing to curing, to ensure the best quality meat. The natural acorn-based diet gives Iberico pork a delicious, nutty, buttery fat which melts in the mouth.

Acorn Fed 100% Iberico Shoulder Ham is made from 100% pure Iberico pigs, mamellado-lampiño breed.

The curing process is totally artisanal and natural, taking place in drying cellars in the Jabugo area for a period between 24 to 30 months. 

The Acorn Fed 100% Iberico Shoulder shoulder ham has a more intense aroma and texture than Iberico Bellota Ham due to the higher proportion of intra and intermuscular fat.
