Wine made from 'Pedro Ximenez' sweet grapes are used to produce Jerez Sherry Vinegar Pedro Jimenez. Acetic fermentation of the grapes produce a condiment, which are then aged in oak barrels for a minimum of 16 years. Mahagony red, and intensely rich with lasting flavour and aroma. Jerez Sherry Vinegar Pedro Jimenez has distinct woody notes of the oak in which it was aged. Ideal in dressings and sauces.
